Hemp Protein Pancakes Method

  1. Whisk the almond milk, ground flaxseed and maple syrup together in a medium bowl.
  2. Stir in the hemp protein powder, then add the oat flour, baking powder and salt. Mix until the batter is free of lumps.
  3. Stir in the melted coconut oil.
  4. Warm a little oil in a frying pan over medium-low heat. Pour in ¼–⅓ cup of batter for each pancake.
  5. When bubbles appear in the centre, turn the pancake over. Cook the other side for about 20–30 seconds, or until cooked through.
  6. Transfer to a plate and repeat with the remaining batter. Finish with your chosen toppings; melted dark chocolate and fruit work well.
