Peanut Butter and Hemp Protein Bar recipe

Whip up this Peanut Butter and Hemp Protein Bar recipe by Panaceas pantry. It’s more like a fudge, but still quick and delicious!

Ingredients

  • 375g (1 jar) smooth natural peanut butter
  • 1/2 cup melted virgin coconut oil
  • 75g maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup plant based protein powder (vanilla or plain)
  • 1/3 cup of hemp hearts
  • 100g 70-90% dark chocolate, divided
  • 1 tbsp peanut butter
  • Sea salt flakes to garnish – optional

Method

1. Lightly grease and line a small tin with baking paper and set aside. Ensure there is an overhang of baking paper for easy removal.
2. Add the peanut butter, melted coconut oil, maple syrup and vanilla. Spend a couple of minutes whisking it all together until it is thick and creamy.
3. Add protein powder and hemp seeds and combine until completely uniform and smooth.
4. Roughly chop the dark chocolate and add a quarter to the mixture and fold through.
5. Pour the mixture into your lined tray, using a spoon to spread it around into an even bar. Put in freezer for an hour to set.
6. Add the remaining dark chocolate and reserved tbsp of peanut butter to a heat proof bowl. Melt over saucepan with boiling water (bowl should not be touching the water). Reduce heat to a simmer to gently melt.
7. Pour melted chocolate over base (once it has cooled) and spread evenly, then place in the fridge for 2+ hours to set.
8. Garnish with sea salt flakes.
