Make a cosy breakfast with these hemp protein pancakes, combining oat flour, almond milk and a little maple syrup. This recipe is inspired by Wake Up to Waffles, as shared by Vitahemp Australia.
Ingredients
- ½ cup almond milk
- 1½ tbsp ground flaxseed
- 2 tbsp pure maple syrup
- ¼ cup hemp protein powder
- ¼ cup oat flour
- ¼ tsp baking powder
- A pinch of salt
- 1 tbsp coconut oil, melted
- A little extra oil for the pan
- Optional toppings: melted dark chocolate and fruit

Hemp Protein Pancakes Method
- Whisk the almond milk, ground flaxseed and maple syrup together in a medium bowl.
- Stir in the hemp protein powder, then add the oat flour, baking powder and salt. Mix until the batter is free of lumps.
- Stir in the melted coconut oil.
- Warm a little oil in a frying pan over medium-low heat. Pour in ¼–⅓ cup of batter for each pancake.
- When bubbles appear in the centre, turn the pancake over. Cook the other side for about 20–30 seconds, or until cooked through.
- Transfer to a plate and repeat with the remaining batter. Finish with your chosen toppings; melted dark chocolate and fruit work well.
